How to Make Quick And Easy Rub-ons

In many of my articles I have spoken about rubs. Say you want make one of your own and want a particular spice in your rub. Say something really hot. What would you put in it ? okay for a hot rub you will use something like a cayenne pepper and some cumin. What is cumin ? Well it is a spice that is gotten from a small flowering plant and is used a lot in Indian foods or those from Mexico to get a southwestern flavor
It really adds to the aroma of what you are cooking. It has a concentrate of oil in it and is absorbed into the body and released thru your sweat glands. Its will enhance whatever you may be smoking .It is also easy to find in many grocery stores. So what else would you want in your rub? Okay they would be ingredients like course or kosher salt, black pepper, paprika dried oregano leaves, granulated garlic, these ingredients would produce a southwestern flavor to what you are cooking. The ratio would be as follows 2 tablespoons each of salt, and 2 teaspoons of black pepper and paprika, 1 teaspoon of the cayenne pepper ,oregano , garlic powder.and lastly ½ teaspoon of the cumin.
Mix everything together and apply to your meat you are preparing to cook for around 3 hours to give the blend a chance to absorb into the meat. This should be keep in an airtight container in a cool dry place for a few months without any worries. That is one variety of flavor to get a hotter style rub but say you want something with a sweeter flavor that of course would change your mix of what is put into your rub.
So to get a sweeter style rub again that will keep in an airtight jar in a cool dry place. Use paprika, white sugar , black pepper salt dry mustard, and white pepper. The ratio to mix would be like a 1/3 cup of paprika, ¼ cup of sugar , 1 teaspoons of black pepper, 2 of the salt , dry mustard , and 1 teaspoon of white pepper. This will make enough rub for about 5 to 6 pounds of meat. This will be a good BBq Pork recipe. And ought to give you a flavorful pulled pork . if you don't want it as peppered feel free to experiment a little to get it more to your liking. You might add some brown sugar or a touch of chili powder.Let it marinate over your meat for it to absorb into the tissue. And enhance your end product.
